Tortellini with Sausage, Mushrooms, Cherry Tomato and Spinach

I'm not sure who wouldn't like this combo! It is so simple, yet so delicious. If you are a little lazy tonight, this would be the night to make this dish.


Ingredients:


- 90g baby Spinach

- 140g cherry Tomato

- 1 bunch parsley

- 2 garlic cloves

- 170g mushrooms (cremini or white)

- 30 g vegetable demi-glace (find at your local grocery store, pre-made)

- 90 ml heavy cream

- 9g lemon and herb spice blend (oregano, thyme, paprika, salt, pepper, dried mustard, sugar)

- 1 sausage of your choice

- olive oil


Instructions:


1) Prep - quarter mushrooms, halve cherry tomatoes, chop parsley, mince garlic and remove skin from sausage then crumble


2) Heat a pan on med-high, and add oil - then fill a pot half way with water and bring to a boil. While the water is boiling, add sausage to the pan for approx 3-5 min. Once cooked through, add the mushrooms for another 3-5 min. Then add garlic and tomatoes, stirring frequently until the tomatoes start to soften. Season with spice blend and S&P.


3) Once water is boiling - add the tortellini, and follow package instructions


4) While the pasta is cooking - add the cream and demi-glace to the pan. Take a large spoonful of pasta water and add it to the pan. Cook, and stir frequently for 2-3 minutes or until pasta is finished boiling.


5) Drain the cooked pasta and add to the pan, along with the spinach and half the parsley. Stir so that everything is coated with the sauce and cook until the spinach is wilted, approx. 1-2 min.


6) Voila, serve in a bowl and sprinkle over remaining parsley. Enjoy!
